As we enjoy the hot weather, beautiful sunshine and the sea, what could be better than to sip a cool drink along with the taste of the traditional Greek barbeque? As the man of the household takes great pride in his barb abilities, it has become a competitive skill.

As always, there may be some variation in ingredient or technique from area to area. Some of the simple recipes that work well for summer eating are not only easy, but also good for you. Here are a few to get started on that healthy eating:

Lamb on skewers

Lamb leg or shoulder cut into 1-1/2 inch cubes or a little larger if preferred. Some chunks of onions, peppers and tomatoes. Marinade in some olive oil, salt and pepper, oregano, minced garlic and oregano.

Thread lamb onto the skewers with onions and tomatoes in between. Get the household barbi chef to place on the grill till cooked to desired taste.

Chicken on a spit

 

Sprinkle some ground black pepper and salt along with some sweet paprika. Stuff and fill the chicken with a tablespoon of olive oil and half a lemon.

Place on barbeque spit and let it turn on slow speed setting till cooked through and outside looks crisp golden brown.

Bouyioudi side dish

Cutting tomatoes in half, cook on the barbeque till soft, add some long green chilli peppers till cooked on each side.

In a bowl put approximately 200 grams of Feta cheese and 3 tablespoons of olive oil. Remove skin from chilli peppers and then run a fork from top to bottom of each one, leaving it in strands. Remove the stems of the peppers and place on top of the Feta. Using a knife and fork, cut up the chilli pepper and then add the tomatoes, also skinned. On top of this, add some oregano and some red wine vinegar to taste.

Using a fork only and not a blender, mash and combine all ingredients together and serve with some hot toasted crispy bread or pitta with olive oil and oregano.

Tzatziki 

Mix 3 cups of plain yoghurt with 1 large cucumber peeled and grated. Add some finely crushed garlic or use garlic powder as an alternative. Add some pepper.

For variation some finely chopped mint or dill can be added.

All this with your favourite Greek wine or beer, compliments it beautifully.
